according to the website he seems to design them in a 3D modeling program like 3D studio max. You can design whatever shape you want. Those programs also have a function which will "unfold" your modeled structure, making a 2D template which you can then print out, cut you and glue together to make you own paper creation. Make sure you add the tabs for glueing the shape together.
Apart from that you use cardboard of appropriate stiffness and flexibility (depending what shape you are planning), a good craft knife, glue, tape, and probably patience.
If you really don't know how to start, I would first make a simple cube, then maybe a dodecahedron so you get an idea how things work, and then take it from there.
maybe also look at work of Buckminster Fuller's or Frank Gehry's work. Architects usually make cardboard models at some stage too, so look at the buildings as inspirations for shapes to use.
